Avocado & Bean Salad: LOW CARB Vegan Recipe!
Fiery Fiesta Salad with Avocado & Beans
Salad Ingredients
Mix up the following ingredients:
2 handfuls of rocket. It’s carb free!
Half an avocado (cubed). Rich in healthy fats.
40g raw sugar snap peas. Super low calorie!
40g sweetcorn. Packed with vitamins & minerals.
Half a red pepper (sliced). 1 of your 5-a-day!
80g black eye beans. A great source of fibre.
Salad Dressing Ingredients
Mix all the salad ingredients above, then whip up a quick dressing with 2 sprigs of coriander, 2 tsp lime juice, a couple drops of tabasco and half a red chilli (chopped).
The whizzed-up dressing contains 0g carbs and only 5 calories!
Salad Nutritional Information
The final salad (including the dressing) contains 18g carbs, 260 calories, 10g protein, 15g fat, 13g fibre and 4½ portions of 5-a-day. Lovely!
